Can you give me a brief rundown of your "average" work day? (I know you probably don't have a normal work day, but as best as you can!)
an average work day for me starts on the later side, since I tend to spend most of time at Honey's late into the night. The best days in my mind are when we have pop up with a visiting chef or dinner with Honey's chef Tara Norvell.
I love building tools to cook with, I keep a bunch of metal working tools in the basement, so a great day is one where I get to start it off with some metal work to make the cooking tools for later in the night, we have built all sorts of ingredient specific grills and, its something I always look forward to. I am the resident handy person so if there is not a special project going on there is often a long list of tasks, things to fix or organize, so i usually try to check one or two of those things off my list. Then there is inevitably a mountain of email to work through, I try to limit the amount of time I spend on that, but while I am on the computer I try to spend an hour uploading receipts and invoices and doing basic office work.
Once 5pm rolls around things get more fun and I move topside to the bar and chat with friends visiting, work on the roof garden a bit while there is still light, maybe taste some new meads that by biz partner Raphael is working on. Not one day is the same, so its keeps me on my toes and inspired.
How do you describe your personal style?
it varies wildy, but there is a through current which is that I love wearing garments that friends of mine make or friends of friends make. I love having a personal connection and story to the things I put on my body.
How does your work play into that?
i often get to trade cocktail work for clothes!
